Well, we retires to have some daily challenges.  Each morning I struggle to make my 2 eggs over easy on toast with a glass of orange juice and a couple of toast.  One of these mornings I will have 2 PERFECT eggs over easy made with my own 2 hands.  Until that happens, I will just close my eyes and imagine they are what I want.

Hi Henry - have you ever tried poaching your eggs?  I love my eggs over easy too and cannot do it, so I poach my eggs and they seem to taste just as good and they come out right everytime.  Just something to think about:)

They have these nice little microwave poachers that work very well too. I use one of those.
